Dry Mix
  • 8.8oz-250g oats
  • 1 teaspoon bicarbonate of soda
  • ½ tablespoon ground nutmeg
  • ½ teaspoon salt
  • 2x granny smith apples (grated- skin on)
  • 1x medium carrot (grated)
  • 2.8oz-80g pomegranate seeds
  • 1.7oz-50g crushed pistachio nuts
Wet Mix
  • 4.2oz-120g unsalted butter
  • 4 tablespoons golden syrup
  • 1x egg white
  • 1 tablespoon vanilla extract
  • 2.1oz-60g light brown soft sugar


  1. Pre-heat oven to 374˚F/190˚C regular oven or 338˚F /170˚C fan assisted oven and grease a deep square 20cm cake tin and set to one side
  2. In a large mixing bowl, add all the dry mix and combine well. Set to one side
  3. In a small saucepan over a medium/low heat, add the butter, golden syrup, vanilla extract and sugar and stir until melted and the sugar has dissolved. Remove from heat and pour into the dry mix. Mix it all together
  4. Add the egg white and combine one last time
  5. Pop into the over for 45/50 minutes until golden brown and a skewer can be inserted and come out clean
  6. Leave to cool completely in the tin. Remove and cut into squares and serve
