Frankenstein Marshmallow Squares© (makes 8)


Marshmallow Square
  • 3 tablespoons green food colouring
  • 10.5oz-300g marshmallows
  • 5.2oz-150g rice crisp cereal
  • 1.7oz-50g unsalted butter
  • 3.5oz-100g golden syrup
  • 10.5oz-300g dark chocolate (melted)
  • 16 icing eyes
  • Black writing icing


  1. Very lightly grease a 28cm x 23cm x 5cm (approx.) roasting pan and set to one side
  2. Start adding the marshmallows, golden syrup, butter and green food colouring to a small saucepan over medium low heat. Continuously stir until all the ingredients have melted and fully combined together. Remove from the heat and pour into a large mixing bowl
  3. Add the rice crispy cereal and using a wooden spoon, stir quickly until all the cereal is covered in the marshmallow mix. Transfer the cereal to the prepared tin immediately and flatten it out evenly as much as you can. Cover with cling-film and leave to set for at least 6 hours (it will always be gooey)
  4. Next, cut the marshmallow cereal into 8 squares (carefully). Transfer gently onto a piece of baking parchment from the tin (I used a spatula)
  5. Have your melted chocolate in a small bowl. Pick up a square and dip the shortest side down into the bowl to create a ‘Frankenstein’ hair line. Immediately pop back onto the baking parchment to set. Repeat this process with the 7 remaining squares
  6. Next, using the black writing icing, put a little blob on the back of an icing eye and put into the place where eyes should be (underneath the chocolate hair at the top of the square). Repeat with the second eye and then place 2 eyes on each of the 7 remaining
  7. Finally, using the black writing icing, draw on stitched mouth (one line across and 3 little lines vertical on top of it). This is your Frankenstein face. Leave to set for at least 1 hour. Remove from the baking paper (cut of any runaway chocolate or rice crisp cereal using a sharp knife to neaten them up if you need to)
  8. Serve or store in an airtight container
