Chilli Chocolate Brownies©


  • 7oz-200g unsalted butter (room temp)
  • 5.2oz-150g plain flour (sifted)
  • 7oz-200g dark chocolate
  • 1.9oz-55g cocoa powder (sifted)
  • 3.5oz-100g milk chocolate chips
  • 3 Large Eggs (Free Range)
  • 10.2oz-290g golden caster sugar
  • ½ teaspoon ground cinnamon
  • 2 teaspoons hot chilli powder (or more depending on personal taste
  • Pinch of Salt
  • tablespoon golden syrup
  • 2 tablespoons semi-skimmed milk


  1. Pre-heat oven with an over tray inside to 356˚f/180˚c regular oven or 320˚f /160˚c fan assisted oven. Grease a 20cm/8" square cake tin and set to one side
  2. Start by beating the sugar and butter together into a paste using an electric hand-whisk, stand mixer or good old fashioned wooden spoon. Add the golden syrup and chilli powder and beat once more. Set to one side
  3. Melt the dark chocolate using your preferred method. I use a microwaveable bowl, break up the chocolate and pop in the microwave on a medium heat for 1 minute, remove and then stir until smooth. It may need a little longer or less depending on your microwave strength so keep checking and stirring at intervals, so you don't burn the chocolate. Set the chocolate to one side to cool
  4. Whilst the chocolate is cooling, sieve the flour, salt and cocoa powder into a large mixing bowl and mix together with a spoon. Set to one side
  5. Next, pour the cooled melted chocolate into the butter mixture and add one of the eggs. Mix together until well combined. Add the other two eggs, mixing in between each addition
  6. On a low setting on your mixer, add the flour mix to the wet mix and combine thoroughly until the mixture no longer looks dusty with flour. Add the chocolate chunks and milk and combine until the chunks are evenly distributed and the milk is absorbed
  7. Pour the brownie mix into the pre-prepared tin and smooth out evenly. Pop into the oven for 35 minutes or until you can insert a skewer into the center and it comes out clean. Remove from the oven and allow to cool in the tin for 10 minutes before removing to cool completely
  8. Bake for 35 minutes. Remove from the oven and allow to cool in the tin for 10-15 minutes before removing and allowing to cool completely.
  9. Cut into squares and serve
