Caramel Apple Oat Bars©


Apple Mix
  • 3 red apples (cored & thinly sliced)
  • 3.3fl oz-100ml water
  • 1 tablespoon caster sugar
Bar Mix
  • 6.3oz-180g oats
  • 1 tablespoon ground cinnamon
  • 2.1oz-60g unsalted butter (room temperature)
  • 1 teaspoon ground ginger
  • 0.8fl oz-25ml water
  • 3.5oz-100g dried cranberries
  • 3.5oz-100g ground almonds
Caramel Sauce
  • 1.6fl oz-50ml water
  • 12 dates (pitted)
  • 1 tablespoon caster sugar
  • 2 tablespoons golden syrup
  • 3 tablespoons bar mix
  • Flaked almonds
  • 1 tablespoon oats


  1. Pre-heat oven with an over tray inside to 392˚f/200˚c regular oven or 356˚f /180˚c fan assisted oven. Grease a 20cm/8” square cake tin and set to one side
  2. Place the apples, water and sugar into a small saucepan over a high heat for 5 minutes. Remove from the heat and set to one side to cool
  3. Blitz the oats for the bar mix in a mini food processor until you have a flour like consistency. Tip this into a mixing bowl and combine with the cranberries, caster sugar, ground almonds, cinnamon and ginger
  4. Add the water and butter. Combine using your fingertips to make it into a crumble. Keep 3 tablespoons of the bar mix separately to one side to use later
  5. Squish the mix into the base of the prepared tin using the back of a spoon so it is compact- flattening it down evenly. Set to one side along with the bowl with the remaining mix
  6. Continue by making the caramel sauce. Blitz together the dates, sugar, golden syrup and water until well combined. Pour into the apple mixture and ensure the apples are thoroughly coated in the sauce. Spread the caramel apple mix on top of the bar mix evenly. Set to one side
  7. Add the remaining bar mix to the flaked almonds and oats and combine with a spoon. Lightly press down with your fingers to create an even layer
  8. Pop into the oven for 30 minutes until golden brown. Remove and set to one side for 15 minutes in the tin before removing and leaving to cool completely.
  9. Slice into bar shapes and serve
